During the Holidays it seems that there is the standard that MUST be served on Thanksgiving and Christmas days.  If you want to break the stereotypical meal served on your Holiday of choice, try my favorite recipe for a successful Holiday Meatloaf. Follow these ingredients and directions, I guarantee success! Pork Rind Meatloaf - You will need to use the following ingredients:

  • 1 1/2 Pounds ground beef or venison
  • 1/3 Cup Tomato sauce
  • 2 Tbsp. Parsley
  • 1/2 Cup Parmesan, grated
  • 1/4 Cup Onion, chopped
  • Salt and pepper to taste
  • 1 Cup Pork Rind crumbs
  • 1 Egg
  • 1 Bottle of Ketchup (or my favorite BBQ Sauce)

Mix all ingredients together in a bowl, making sure to distribute pork rind crumbs evenly. Shape mixture into a loaf and place in a shallow nonstick baking pan. Bake in a preheated oven at 350ºF for 1 hour. Remove from oven.  Layer the top of loaf with Ketchup or BBQ Sauce and return to oven for no more than 5 minutes on broil to glaze the top of the loaf. Serves up to 6 people.
